Rather than just posting my photos from India, I thought that it would be better to provide some context. Here is the text of the emails that many of you read while I was there, with the accompanying photos.
Photos of Agra
March 6 - Agra is famous because it is the city that hosts the Taj Mahal. The Agra Fort is worth its own visit and has a history strongly linked to the Taj. Shah Jahan, the man who built the Taj, was imprisoned in the fort by his son and spent the last of his days in Muasamman Burj, a tower with a marble balcony with an excellent view of the Taj Mahal.
I am a chocolate maker at a Toronto-based artisnal chocolate factory. Former pastry chef for a well-known Canadian chef. Cooking became my career a few years ago after spending a number of years working in marketing on Bay Street.
Food seems to take up a good amount of my personal, as well as professional, time. When I am not at work, I am reading cookbooks and restaurant reviews, preserving fresh Ontario produce, cooking, baking and ultimately, eating.
My culinary philosophy is to eat locally and seasonally. But because I live in a temperate climate, I make provisions to enjoy seasonal produce all year round by canning, freezing and preserving what I can while it is in season.
